Three things in that table are worth stopping on.

The low-fat one has more protein

1% milkfat carries 12.4 g of protein per 100 g. Creamed 4% carries 11.1 g. That runs against the instinct that the richer tub is the more substantial one. The reason is simple dilution: cream displaces curd, so as fat goes up, protein per 100 g comes down slightly. If protein per spoonful is what you are after, the cheapest low-fat tub is doing more work than the premium one. That matters most where the cheese is carrying the dish rather than seasoning it – in bagel dough, or stirred through a pasta sauce.

Sodium is where the real spread is
