Description

Creamy Garlic Parmesan Chicken Breast is a quick, one-pan dinner with a rich, velvety sauce. It’s ready in about 31 minutes and serves four.


Ingredients

For the Chicken:

2 large boneless, skinless chicken breasts (about 1.5 lbs total), sliced horizontally into 4 cutlets

1 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1 tsp Italian seasoning

For the Sauce:

2 tbsp unsalted butter

2 tbsp all-purpose flour

1 cup chicken broth

1 cup heavy cream

4 cloves garlic, minced

1 cup freshly grated parmesan cheese (about 3 oz)

Optional:

Fresh parsley, chopped


Instructions

1. Pat the chicken cutlets dry and season with the salt, pepper, and Italian seasoning.

2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side until golden brown and cooked through. Transfer to a plate.

3. Reduce the heat to medium. Melt the butter in the same skillet. Whisk in the flour and cook for 1 minute.

4. Pour in the chicken broth, whisking constantly to scrape up browned bits. Simmer for 1 minute.

5. Stir in the heavy cream. Add the minced garlic and cook for 30 seconds until fragrant.

6. Remove the skillet from the heat. Stir in the grated parmesan cheese until melted and smooth.

7. Return the chicken and any juices to the skillet, spooning the sauce over the top. Warm through for 1-2 minutes. Serve immediately.

Notes

Grate your own parmesan from a block for a smooth sauce; pre-shredded cheese can make it grainy.

Chicken is done at 165°F. Pull it at 160°F as it will continue cooking in the sauce.

Add the garlic off the heat or just for 30 seconds. Cooking it too long makes it bitter.

Store in the refrigerator for up to 3 days or freezer for up to 2 months. Reheat gently in a skillet over medium-low heat with a splash of water, or microwave in 30-second intervals.
