Ingredients
1 medium sweet potato
5 oz lean ground beef
½ cup cottage cheese
1 tsp garlic powder
½ tsp smoked paprika
Salt & pepper to taste
Optional: hot honey, green onions, avocado
Instructions
1. Preheat oven to 425°F. Dice sweet potato, toss in olive oil, salt, and pepper. Roast 25 min.
2. Brown ground beef in skillet with garlic powder, smoked paprika, salt, and pepper until cooked.
3. Assemble bowl with roasted sweet potatoes, cooked ground beef, and cottage cheese.
4. Top with hot honey, sliced green onions, or avocado as desired.
