4 large bell peppers, halved and seeded

1/2 lb steak, thinly sliced

1/2 lb shrimp, peeled and deveined

1 tbsp Cajun seasoning

Salt and black pepper to taste

1 tbsp olive oil

1/2 cup diced onions

1/2 cup diced tomatoes

1/2 cup cooked rice or quinoa (optional)

1/2 cup shredded cheddar or Monterey Jack cheese

Fresh parsley or chives for garnish


Instructions

1. Preheat oven to 375°F.

2. Season steak and shrimp with Cajun seasoning, salt, and pepper.

3. Heat olive oil in a skillet and sauté onions until softened.

4. Add steak and cook for 2–3 minutes until browned.

5. Add shrimp and tomatoes and cook until shrimp turn pink.

6. Stir in cooked rice or quinoa if using.

7. Fill bell pepper halves with the mixture.

8. Top with shredded cheese.

9. Bake for 15–20 minutes until peppers are tender and cheese is bubbly.

10. Garnish and serve.

Notes

Use sturdy bell peppers to prevent collapsing.

Do not overcook shrimp before baking.
