Description
Blueberry Lemon Butter Swim Biscuits are buttery, golden-edged, and filled with juicy blueberries, finished with a tangy lemon glaze. Super moist inside and crisp on the edges thanks to the butter “swim” method.
Ingredients
2½ cups all-purpose flour, spoon and leveled
⅓ cup granulated sugar
1 tablespoon baking powder
¼ teaspoon salt
1¾ cups buttermilk, (up to 2 cups)
1½ cups fresh blueberries
½ cup salted butter, melted (1 stick)
Glaze:
1 cup powdered sugar
2 tablespoon lemon juice
½ teaspoon vanilla extract
Instructions
1. Preheat oven to 450°F.
2. Whisk flour, sugar, baking powder, and salt in a bowl.
3. Slowly add buttermilk, stirring gently to form sticky dough.
4. Fold in blueberries without crushing them.
5. Pour melted butter into a 9×9-inch baking dish.
6. Spread dough evenly into buttered dish. Smooth top and score into 9 squares.
7. Bake for 25–30 minutes, until golden brown on top.
8. Whisk glaze ingredients until smooth.
9. Drizzle glaze over warm biscuits before serving.
Notes
If using frozen blueberries, don’t thaw before adding.
Add lemon zest to glaze for more citrus punch.
Store leftovers in an airtight container up to 3 days.
